Scrambled Tofu


 Ingredients

  • 1 tbsp olive oil
  • 1/3 block of firm pressed tofu
  • 1/4 tsp turmeric
  • 1/2 tsp salt 
  • 1/4 tsp black pepper
  • 1/4 tsp garlic powder
  • 1-2 tbsp nutritional yeast

 

Instructions

  1. Heat olive oil in pan over medium heat. 
  2. Add small blocks of crumbled readily pressed and dried tofu. Cook for 3-4 mins
  3. Add seasonings and stir for another 3-5 minutes
  4. Serve with spinach, avocado, mini bell peppers, etc!

VEGAN CHICKPEA TUNA SALAD


Ingredients

  • 1 15 ounce can of garbanzo beans rinsed and drained
  • 1/4 cup celery
  • 3-4 tbsp vegenaise 
  • 1 tbsp soy sauce

 

Add ons (optional)

  • tomato
  • lettuce
  • onion
  • avocado
  • mustard

 

Instructions

  1. In a food processors carefully mash chickpeas. Only needs a few blends!
  2. Transfer mashed chickpeas to a larger bowl or remove blade and stir in seasonings
  3. Serve as is or in a salad, as a sandwich or a wrap!
